Each fabric is going to feel different, and it will add in a very different way to the overall feel of a sofa. You may like the look of heavily textured fabrics, but do you like the feel of them? Does a surface feel too slick? Do you like the sound leather makes when you shift your weight on it? Sit on different fabrics long enough till you find one that is right for you. This is especially important if it is going to be "the sofa," that special one that is used all the time.
It is true that you are saving this furniture from potentially going to a landfill, know that reupholstering an old sofa could end up costing more than you would pay for a new one. Even after you have it reupholstered, it could still be uncomfortable. I am assuming you just mean to have the sofa re-covered, and are not planning to change its insides.
Find an ornamental piece of wrought iron fence or a gate and have a wooden frame for it. Place a piece of 1/2 inch thick beveled-edge plate glass on top of the iron for a smooth surface. You can see that you can use almost anything for a coffee table. Keep in mind that the piece should be sturdy, properly proportioned, and durable, and it will give you great wear and convenience in any room.
